Lighten Up

So I’m in complete denial that there was a snow storm at the beginning of the week.  It’s April.  In my kitchen I cranked the reggae music and whipped up some incredible spring inspired dishes.  This time around I thought I would share with you a “3 meal week” which is honestly more realistic in my crazy world, and I’m sure in yours as well.  This menu was inspired by the latest issue of “Cooking Light” landing in my mailbox.  PS – I pretty much double the salt & butter or add bacon to their recipes…hee hee!  Cheers!

Crab Cakes with
Spring Vegetable Bibb Lettuce Salad and
Creamy Herb Dressing

Spring Vegetable & Bean Soup with
Crusty Bread
